PRODUCING MEAD
Mead has been made and consumed by humans for many thousands of years either as a honey beer or honey wine. It is defined as an alcoholic drink resulting from the fermentation of honey and water by yeasts. There are other ingredients which when added together produce an excellent honey wine.
The various definitions for the different types of mead are:
Basic Mead – made from honey, water and yeast
Melomel – made from any fruit juice or flowers, honey and yeast
Pyment – made from red or white grapes, honey and yeast
Hippocras – made from grape juice, herbs, honey and yeast
Cyser – apple juice or cider, honey and yeast
Metheglin – basic mead flavoured or fermented with spices
Hydromel – a French term for mead or a watered down mead
